Ripasso is a beautiful deep red wine, with flavor notes of pepper, cranberries, cherries, and plums, complementing dishes with pasta and game.
During the drying process, the grapes lose 50% of their weight; the drying process increases the sugar concentration and also develops the aromatic and polyphenolic potential. After the drying of the grapes, they are crushed and destemmed, then poured into stainless tanks and fermented at controlled temperature for 2-3 weeks, after which the wines are aged in oak barrels for 18 months before being bottled.
